Juicy Lucy Burger & Beer Battered Onion Rings

The boyfriend and I made burgers and onion rings last night. I seasoned and formed the patties while he grilled them. I was also in charge of Operation: Onion Rings. This was my first time frying anything and it was not bad (only one slight burn.) The recipe was yummy, but I did dredge the onions in flour before the batter like one comment suggested.

The onion rings went off without a hitch, however, the burgers encountered some problems. I made the burgers too meaty and we’re still getting to know our grill so some of them were a little unevenly cooked. My mom helped us out though. She cooked the burgers on the stove (steamy) and they came out super tasty.

Sister’s suggestion was to add more salt to the onion rings (I did forget to season after but I liked the sweetness of the batter.) Mom has already requested another batch of onion rings for this weekend (just to use up the oil, duh.) The meal was a hit with the whole family. Almost everyone took some leftovers for lunch, which I’m taking as a compliment.

Cereal crusted pb’n’j sandwich

Overtaken by insomnia today so this is either breakfast or a really, really late midnight snack. This is the first thing I’ve tried cooking in a long time (and first non-pasta related!) Overall it was okay. The taste and crunch of the grilled cereal was yummy but I think I left it a little undercooked :/ (I’m so scared of the salmonella!)

I think using that Goober brand of pb’n’j (the swirly kind) would be awesome in this. Also cinnamon, just pump up the french toast factor!

It took about 5 minutes to make (setting up, cooking, eating lol) and I still managed to burn my finger (boo!)

This summer is my summer of food. I don’t cook, like, ever. The most I have ever really ventured is ramen, digiornos and pasta. I did make homemade macaroni n’ cheese once. That was pretty great. The second time, I burnt the roux twice and cried all over my then-pretty-dang-new boyfrann (who was really nice about it) and went out for Ihop. 

Since I’m going to make this summer work for me, damn it, I will cook things. Food things!

10 facts about my room

1) Two of my walls are hot pink/red and the other two are bright baby pink
2) I have a sparkly sequined Jesus portrait above my bed that used to belong to my grandparents. It is one of my most prized possessions.
3) I recently bought a drawing horse at michaels and it’s only been used as a clothing rack so far :( 
4) I have a live-in roommate a.k.a. my dog, Muñeca. She’s hella moody, fat, and adorable.
5) I currently have 4 plushies on my bed: two pigs, a Hello Kitty, and a Domo doll. (I’m in 8th grade, y’all)
6) Half of my room is consumed in canvases/yarn/painting supplies. It’s around 70/30 crafts/clothes.
7) My bookcase was taken from an old office that was being remodeled and it still has an old memo taped up inside of it.
8) I have a Charles and Diana wedding tin where I keep my birth control, pens, teasing brush. A gift from one of my bffs and it always makes me giggle.
9) I have a computer that never gets used/is super outdated that was supposed to be the family computer (over the years we have acquired 4 laptops so…) Now it’s taking up space and I need to remember to get it recycled.
10) My carpet is really ugly. Paint + puppy accidents + hair dye = bleh 

Today one of my classmates surprised me with a bag full of gummies! They’re orange and apple gummies and so yummy! I love people who are into random acts of radness! I had time to dress up and got loads of compliments on my gothy outfit (but no pictures.) My first class started late so I got to sleep in (even more so than other days, don’t judge) and I got to come home early from my afternoon class. 

In the famous words of Ice Cube, today was a good day.
